THE KEY ROLE OF UBIQUINOL IN PHYSIOLOGY AND HEALTH
Ubiquinol is the only lipid involved in the direct transfer of electrons in mitochondria. It does not only act in the electron transport chain for mitochondrial respiration but also is important in synthesis of molecules and in lipid catabolism. This essential role is highlighted in those syndromes associated with its deficiency that courses with ataxia, myalgia, kidney disease, deafness among other symptoms. Ubiquinol is also the main antioxidant in cell membranes and in plasma lipoproteins avoiding lipid peroxidation. EFFECTS ON LIPID METABOLISM OF RICH OLIVE EXTRACTS IN POLYPHENOLS
Olive extracts rich in polyphenols produce neurological protection, anti-inflammation, reduce glucose and cholesterol levels, modify the gene expression of lipid metabolism in fish and human cell cultures. The objective is to see if patients with hyperlipidemia treated with hygienic-dietetic measures and the extract obtain benefits in their dyslipidemias. We randomized 33 patients (17 controls and 18 interventions). They left 2 controls. There are no significant differences between the two groups at the beginning. After one month of treatment, the controls show no difference between the initial and final values ??by peer analysis. However, in the intervention group, a significant decrease in total cholesterol and LDL cholesterol has been observed. We can conclude that extracts rich in olive polyphenols decrease cholesterolemia and LDL cholesterol. There is evidence of an increase in HDL cholesterol and a decrease in triglycerides.

SUPERCRITICAL EXTRACTION OF HEALTHY INGREDIENTS FOR NUTRACEUTICCAL PRODUCTS
Fluids, such as CO2, in Supercritical State are an alternative to chemical extraction processes to obtain ingredients for the formulation of nutraceuticals. The Supercritical Fluids have being used for the high performance extraction of a large number of nutraceuticals (polyphenols, EPA / DHA, sterols, carotenoids, antioxidants ...) from raw materials such as nuts, seeds, cereals, aromatic herbs, spices , fish oils and algae among others. In addition, the versatility of the technology allows the development of healthier foods by reducing or eliminating unwanted substances, such as fat content, also increasing the protein content of defatted material. ACTIVITIES OF PHOSPHOLIPIDS IN LIVER HEALTH AND GUT PROTECTION
Phospholipids are not only the building blocks of cell membranes, but they act also as essential elements of the metabolism. They enhance the assimilation of nutrients., they act as efficient carriers of components like choline, phosphorus or DHA. Their food supply is mandatory as the internal metabolic synthesis is not sufficient to maintain all their physiological beneficial roles.
