Technology combined with qualityThe winery took 18 months to design and 10 to build, with a capacity of 200 tons. It is a modular concept and can be expanded up to 300 tons. It was the first winery outside Australia to install the mechanical press, which is considered excellent for gentle extraction rather than over-extracting some of the more bitter elements of the grape. Whenever possible, gravity is used to move the grapes through the winery, allowing the fruit to be handled more carefully. The Algarve offers excellent conditions for producing fruity, modern-style wines. The sea breeze moderates the heat, and the limestone soils limit water, resulting in an ideal environment for ripening the grapes needed to make high-quality wine.
